From our KLTV cookbook called "Proud of East Texas," (what else?) comes a recipe for a quick seafood dinner.

The recipe was submitted in the 1998 by Diana Conine of Tyler. It sounds pretty simple, delicious, and quick:

Seafood Stroganoff:

1 pound shrimp, crawfish tails, or scallops (or a combination)
1 bunch of green onions, sliced (tops included)
1 stick of butter (ed. note: or a healthy Omega-3 butter blend, like Smart Balance)
4 TBS flour
2 TBS garlic powder (or to taste)
1/2 pound fresh mushrooms, sliced (ed. note: you can buy these pre-sliced to save time)
1 tsp worcestershire sauce
2 tsp creole seasoning (any brand you like)
1/2 cup vermouth (optional, but definitely adds better flavor) (ed. note: white wine could be substituted if no vermouth on hand)
1 16 oz. carton of sour cream. (ed. note: light sour cream will cut fat and calories and still be creamy and delicious!)

Peel and devein shrimp, if necessary.

Consumers who owe money or are behind on their bills may be legitimately contacted by debt collectors to pay off debts.  In a recent release of the top complaints reported to BBB, collection agencies ranked 5th in number of complaints received.  With more than 15,000 complaints, consumers need to be aware of the best practices for when it comes to handling debt collectors.

“Be wary of the red flags for fraudulent debt collectors”, said Mechele Agbayani Mills, President and CEO of BBB Serving Central East Texas. “Refusing to reveal the name of their agency or demands that the payments be made in cash or money transfer only, could mean that a phony debt collector is making an attempt at identity theft”.

It’s important for consumers to verify the alleged debt before taking action.

Dear WHS Family,

At our recent Volunteer Appreciation Celebration, I said that I need to at least partly step down from the leadership of WHS,, partly because of my husband's health and partly because of my own health. But in order to do that, we must have another leader who is committed enough and free enough to be able to serve when needed and to help us along the way. Polly is wonderful, but it is too much to ask her to do it all by herself. I am sure that none of you realize how much time, planning, gas, community involvement, and working around family, friends and social activities leadership in WHS takes.

This weekend I am unable to help with any of these welcomes, and Polly will do it all. I have done the same by myself, but it is really difficult and stressful to do it alone, and it is unfair to ask Polly to do it all.

Fundraiser today: Family lost young son, now adopting twin babies from incarcerated mom

The Croley family lost their six-year-old son in 2010 when a vehicle hit them from behind as the father was turning left into the school parking lot, and a utility van behind them failed to brake.

Now they've been matched with an incarcerated mom out-of-state who is giving up her twin babies, due later in May, as adoptive parents.

Their local Chili's Restaurant, in Longview, is sponsoring a Give Back Day for the Croley family to help raise money for this adoption. Chili's is working with them through Camille Acres Missionary Baptist Church for all tax and financial transactions.

Chili's manager Tyler Braxton said, "At Chili’s, we strive to build our community relations and personal connections with our guests, and most importantly we WANT to GIVE BACK!!"

"With your help, I hope that this will be an amazing event!   Being the Monday following Mothers Day, we are hoping to pick up traffic from the Mothers that are celebrating their special day maybe just a day late!  With such a touching event, we hope they will choose to dine at Chili’s to help provide for this family in their time of need!"

For every guest that comes in with a flier or even mentions the Give Back Night, we will donate 15% of their total check to the family!  We had huge success with a similar GBN for Haven Grace in Tyler a few months ago.  We tagged over 100 Chili’s and raised over $15,000.00 for the family!"

Thursday, May 17 beginning 5 to 8 p.m. at the National Guard Armory on the North Loop in Palestine Texas (Look for the tank).

The community is invited to join in fellowship for a predeployment picnic at the armory.  We’ll have hotdogs, kids games, face painting, snacks, local talents, vehicle tours and visits with the soldiers and their families.

Share your thoughts and goodwill to the soldiers and those family members that share this difficult time with them.  We need a few extra items.  If you can help out, please call 903-723-1578, 903-849-5361 locally.  We will coordinate with the FRG leader.

Friday, May 18, at 2 p.m., step out onto the Loop and wave on the Guardsmen on their last trip around the loop before they are set to transfer overseas.  Fly your flags and yellow ribbons on this day and until they come home.  Hope to see you there.

Help Stamp Out Hunger in East Texas. On Saturday, May 12th, the National Association of Letter Carriers (NALC) in East Texas will collect food for the East Texas Food Bank. Now in its 20th year, the annual food drive has grown from a regional to a national effort that provides assistance to the millions of Americans struggling to put food on the table.

“Stamp Out Hunger is one of the easiest ways to help fight hunger in our community without even leaving your home,” said Dennis Cullinane, executive director of the East Texas Food Bank.
